I have prepared this two weeks ago, beef meat for tacos, and beans, corn and avocado salad.
Meat for tacos
- 800 grams of ground beef
- 1 big onion
- 2 garlic cloves
- 2 ripe tomatoes (big ones)
- 2 Cups of water
- 1/4 cup of wine (optional)
Prepare the tomatoes, by having them in boiling water for a while, so you can peel them easier, then smash them in a colander so you have only the pulp and juice.
Put the grated onion and the garlic in a pan with oil (I've used sunflower oil). Cook until the onion is transparent. Now move that to a pot, and add the tomato, and cook with low fire.
On the pan is now the turn of the beef, cook it with a little of oil, until well done, then move all beef to the same pot, adding it to the Tomato. Add the two cups of water (just one if there is plenty of juice) and salt. Let it cook until it start to dry. At the end, add the optional wine and let the alcohol evaporate. Put aside for it to cool down a little.
Beans, Corn and Avocado salad
- Corn kernels (I prefer them fresh and not canned)
- Fresh black beans
- Olive oil
To prepare the beans, have them in water in your refrigerator all night, then cook it water until soft. Boil the corn kernels until cooked.
We now have everything ready, just cut the avocado in cubes, the same with tomatoes, mix everything together. The quantities depends on your own taste.
