This weekend was really hot here in Bolivia (we are entering the summer), so I wanted to have a fresh lunch. I have decided to go with a chicken salad.
The ingredients are:
- Shredded chicken breast
- Cut off the cob corn
- Lime juice
- Olive oil
The chicken was just boiled in water with half an onion, this last one was later discarded, just to flavor the chicken.
The corn is boiled, and cut off the cob corn. Then, as with any salad, you just have to mix all ingredients and you are ready.
The thyme, olive oil and mustard gives the salad a great flavor, you can avoid mayonnaise.
